This review presents a comprehensive synthesis of walnut oil chemical composition data (major and minor compounds) collected from the literature according to varieties geographic origins walnuts, extraction processes. Considered as influencing factors, pre- post-harvest treatment parameters in shell-walnut kernels were identified works on stability discussed pre-treatment, processes their storage conditions.
